  1. This is an incorrect answer. Sugar Maples are usually tapped in January and February. They are usually done letting out sap by the end of February, and rarely give any sap in March. That means they are not producing sap in early spring anymore. So mid to late winter is the correct answer. At least this is true in New England today. Sometimes they can even start collecting tap around Christmas or the week afterwards.
    There was a time in the past, when the winters were colder that it happened in later winter, and into early spring.
